Do you add your free-tier customers to Stripe?

I was checking out this "Subscription Management in Jamstack" YouTube video and noticed that they added free tier users to a Free Plan in Stripe. The reasoning Thor (his actual name is Thorsten) gave was the reports from stripe would contain all customers.

Is this something other SaaS owners do. Or do you only involve Stripe once a customer starts paying?
